Wood cold pressed oils date back to the Indus Valley Civilization. Evidence of cold pressed oil machinery was discovered in the remains of the Harappan civilization, which is around 5000 years old and is still seen in most rural regions. Even Sanskrit literature from around 500 BC mentions a wooden cold oil press; however, it must be more specified. As early as 1500 BC, mortar and pestle were used for crushing and extracting fluids from vegetative sources. Similar techniques were employed to extract juice from sugarcanes for sugar production and oil from seeds.
Wood cold pressing is one of the most traditional processes for extracting oil from seeds. In India, traditional wooden oil ghani or chekku, a type of wooden press, has been used for centuries to produce cold pressed oils. This process entails the crushing of the seeds in the wooden mortar, which is also called "Chekku," "Ghani," and "Kolhu," and a wooden pestle that is continuously rotated through a bull at a very low RPM (Rotations Per Minute). This process generates less heat, saving the nutrients in the oil from getting denatured. Some artisanal manufacturers still utilise these wooden presses, which are operated manually.
